This catchy (?) title is due to how much it cost to make, probably! And this includes the cost of energy to make it!
How is this so cheap? It only uses ingredients you were going to throw away! The only thing it uses that isn’t ‘waste’ is the stock but you could also make your own of that too. When you see the list it does sound gross, but I am not a big soup fan and absolutely love this! So bear with me and try it!
- stalk of brocolli
- carrot peelings
- heart of a cabbage or tops of leeks
- small potato
- 2 pints of vegetable stock
- black pepper to taste

Cut into small chunks, the smaller they are the quicker it cooks and uses less energy. Put everything in saucepan and boil until soft. Wait until it is cool and then put in a blender (or use a stick blender).
It really is that simple! You can play around with what veg you put in it, I made this while I was making the rest of the dinner this was throwaways from, so no extra time for me either.
What do you think?
