Wraps are a big hit in our house, but we do them in a very unconventional way. I’ll save that for another post, but this one is about trying to make them distinctively Mexican.
I was lucky enough to visit San Diego a few years ago, which is so close to the Mexican border it is hard to tell you are actually in America. The food, decors and general vibe are all heavily influenced by their Spanish speaking neighbours. I ate the most amazing food and had something like this dish cooked for me by my wonderful friend Lucila, who I was staying with.

Ingredients
- wraps
- chicken
- peppers
- mushrooms
- courgette
- red onion
- fajita seasoning
- sour cream
- avocados
- lime juice
Cut the chicken into strips and start cooking this in a large pan with a little bit of oil. I actually used left over roast chicken for this particular meal, either is fine.
Cut one and a half onions in circles, leave the other half for later and cut the other vegetables into strips. You can use whatever vegetables you like, but I chose these for their colours and different textures. Add to the pan and cook until just starting to soften.
Add a sprinkling of fajita seasoning and then taste to see if it enough, this depends on how spicy you like things!
Finely chop or use a food processor to chop the a 1/4 of the onion that is left. This is for the guacamole. Scoop out the flesh of a large avocado and add to the food processor or mash with a fork on a chopping board. Add some seasoning (and some coriander if you like, I personally don’t like it!) and then squeeze in the juice of a lime and mix together.
The fun way to do this with children is for them to ‘build’ them themselves, so put the meat and veg mixture on the table in a big bowl or in the pan. Put the guacamole in a bowl and the sour cream in another bowl (if you want to be fancy, or just if it’s tub if you want to save on washing up!) and let them get creative.

Here’s how to build it so it doesn’t all fall out! Put the wrap on the plate, add a few scoops of meat mixture to the top of the wrap, if it were a clock it would cover from 11-1 ish! Dollop on some guacamole across the meat and then repeat with the sour cream. Then fold up the bottom and fold in the side.

Enjoy all the yumminess! I used red pepper whole wheat wraps for a bit of extra colour and taste, but experiment with what your family might like!
