So I’ll share it anyway!

I use this sauce in sooooo many different ways, as a dressing on a salad, over pork chops, for marinating salmon, as a dip with cream cheese, in stir fries, I could go on and on.

But today’s recipe is one of my famous (I like to think so anyway), ‘chuck it in a pan and see what happens’ recipes.

The started off life as a very boring meat, mash and two veg meal. They girls had been moaning that they wanted some ‘normal’ food and in Holly’s words “can we PLEASE have just one week where we don’t have mushrooms or courgettes hidden in stuff!”. So I was trying to be bland and boring for them!

But I didn’t want bland and boring! Life is too short for boring food. So I jazzed mine and hubby’s up with the magic special sauce!

I had cooked the chicken breasts in my big pan on the hob in some olive oil. Once they were almost done I put them on a plate in the oven on a low heat and then used the pan, with all the juices and oil in to make the sauce.

I chopped a courgette into thick slices ( I know, but I love it ok!!) and pan fried that.

I added 3 large handfuls of spinach. This wilts down to nothing so feel free to add more.

These two vegetable give off a lot of juice, so all the browned on stuff from the pan was now a yummy liquid, it might be good enough just to use this, but I made it even better.

2 dessert spoons of Aunty Sue’s sweet chilli jam.

Dolloped into the pan and mixed in with the veggies.

Then poured over the chicken breast and mashed potato.

Absolute heaven!!!

chilli jam 1 P.S. You can make this with shop bought chilli dipping sauce but it is no where near as nice obviously! And no where near as healthy. I think if you can’t find your own Aunty Sue to make one then try and find a local deli that sells small business sauces, that would be the nearest you would get!
