This is one of my easy, go to, midweek dinners. I have adapted a recipe from Pinterest to make it into an even easier recipe with less fiddling around. I make it as a chuck it all in together and see what happens kind of dish because that’s how I roll!!

Ingredients – ta dah!

Turkey mince is necessary for this dish as it is lighter and goes better with the yoghurt. I tend to chuck in whatever veggies I have to hand that week, but peppers work great, as does broccoli (but be careful you don’t over cook it) and little florets of cauliflower could work too. In the summer, asparagus, beans and mange tout might be worth a try.

I use brown rice as it’s healthier, and some kind of yoghurt is needed but it doesn’t matter what kind, crème fraiche, Greek yoghurt, coconut yoghurt all good. Just not your kids strawberry Petit Filous!!!!!

Cumin and chilli powder give it the kick so use these to taste. No I don’t mean taste them before you put them in, ewwww, add as much or as little as you think your family will like!

So, in true Jamie Oliver 30 min meals put the kettle on for the rice before you start! I then chop the onion, garlic, peppers and courgette and put them in a large frying pan with the turkey mince, this then means you don’t need any extra oil! Cook that down then add the spices, I like 1/4 tsp of cumin and 1/2 tsp of chilli and salt and pepper. (Don’t forget to actually cook your rice at some point.) Then chop up the tomato and add that in to the mince (not the rice!!) and the sweetcorn. Now it’s time for the yoghurt and cheese. Again this can’t be measured as it depends on what yoghurt you are using and how runny/thick you want it. I do 2 generous dollops of yoghurt and a handful of grated cheese. It will look a bit like this;

Please excuse the state of my AGA, but hey I’m keeping it real, I’m not a domestic goddess!

By now your rice should have cooked so strain that and then mix it in. If it is too dry then add more yoghurt, if it’s too wet try cooking it a bit longer with the lid off the pan. Or just use a straining spoon to serve!

Unfortunately it was so yummy that we ate it all up before I remembered to take an arty photo of it on the plate, but then that speaks for itself! The kids love it, it’s almost a one pan meal, it’s quick and easy to do, cheap to make and leftovers freeze well! Happy days!
