BBQ’s fall in to two categories in our circle of friends,
- the spontaneous, come round to ours the barbie is on/falling back to ours after an afternoon drinking session.
- planned event when we have time to think about what we are going to serve.
The food differs with them too
- whatever we can find at the local co-op, usually burgers, sausages both in white buns, a bag of ready made salad if we’re lucky.
- a variety of meat and fish, various sides dishes to complement them, veggies for the kids.
Yesterday was the second option and I thought I’d share some of the yummy recipes I used.

This was the whole spread, burgers, sausages, steak, chicken, salmon, prawns and mackerel plus side dishes and bread a plenty.
I like having things that will work well as leftovers and one of the perks of hosting is usually everyone brings too much and we get to keep the leftovers! So a Saturday night BBQ can feed us on Sunday and Monday night as well if I plan it properly.
First up was potato salad with a twist. I take no credit for this, I got it from my Aunty Sue and it such an easy idea and always goes down a storm. Boil a bag of new potatoes, making sure not to over cook them, let them cool (or if you are short on time run the colander under cold running water for a while), mix in enough mayonnaise to coat all the potatoes and the mix in chopped chorizo. This does work better if you can do it ahead of time as the mayonnaise takes on a slightly pinkish colour from the chorizo if you can leave it mixed for a bit.

Next was a simple green salad but pimped up with a spiraliser! I used curly lettuce as you always seem to get more for your money with that, and it lasts longer in the heat. I added some chopped tomatoes and the spiralised courgettes and tossed it all around a bit to mix it in. This could be the base for all sorts of great additions, let me know your ideas on how to take this further.

Then for a new recipe. I got it from my Midlife Kitchen book and judging by the fact that there isn’t much left, it was a hit! It was mega easy to make, can be made ahead of time of just before you want to eat.

This one fits into all the categories so not only is it easy, incredibly delish, it is also full of nourishment too! (jolly good job too, it counteracted the large quantity of Pimms I drank!)
