I’d been reading about the health benefits of turmeric and wanted to incorporate it into a dinner. Kedgeree seemed like a great choice as I had fish in the freezer, but wasn’t it a breakfast food? I quickly slapped those thoughts away, we don’t think like that in this house, if you want to eat food then eat it. We have done away with the conventions of certain foods for certain times of the day, Holly often has a fish finger sandwich for breakfast and I’ll have peanut butter and banana on toast if I want it for dinner. As long as it balances out over the day it’s all good, it’s just food!
So on to trusty Pinterest for inspiration but I couldn’t find one particular recipe I liked, so in my usual form I just hashed a few together.
Into my big pan went an onion, green pepper, and broccoli, coconut oil and butter. I chose those veggies for their colour, I knew they would look good against the yellow turmeric. I am basing my quantities on cooking for 4 adults, then I get 2 adults and 2 kids portions plus a left over pot for the freezer. But adjust it however you need to. I also put on 4 eggs to hard boil in a pan.

I was meant to just let that sweat off and soften for a bit but I got distracted, reading Facebook probably, I mean doing important mum stuff! So it browned a bit too much!!! Oops! I quickly added in the spices to cover it up and the fish, I used uncoloured smoked haddock.
2tsp of curry powder and 2 tsp of turmeric.

Mix that all in but not too much as you want there to be good lumps of fish.
Then add in brown rice (much healthier than white rice and with it turning yellow the kids won’t know, but make sure you get your cooking times right). I use 3/4 mug for a recipe like this.
Let the rice cook dry for a few minutes until it starts to stick and then add a pint of stock, I used chicken as although it was a fish recipe I didn’t want it tasting too fishy. Add in any frozen veg at this point, I added some more green in the form of peas. Keep checking the rice and then season to your own tastes.
So I then served it with boiled eggs cut up on top, Gavin looked at me with a weird look of ‘eggs for dinner, have you gone mad woman?’ and maybe to make it more dinner like you could leave the eggs off, but I want more protein in there. The fish steak wasn’t that big and it was a cheap way of bulking the dinner out. I liked it, but then I love eggs.
The result was a very lovely looking dinner, that tasted great too. Full of health benefits and cheap to make with plenty of store cupboard ingredients. Let me know if you make it and how it turns out.
